A restaurant kitchen looks improvised and is not. The arrangement of equipment follows the path a dish takes, and departures from that path cost time on every order.
The line is organised by station
Cooking positions are divided by technique rather than by dish. One station handles items that are grilled, another things that are fried, another sauces and finishing.
A single plate may draw components from three stations, which are then brought together at a pass where they are assembled and checked before leaving.
This division exists because equipment cannot easily be duplicated. Concentrating all grilling at one point means one hood, one gas run and one cook responsible for it.
Movement is the thing being minimised
Every step a cook takes during service is time not spent cooking. Layouts are judged largely by how few steps a typical dish requires.
Refrigeration is placed under and beside stations rather than in a distant walk-in, so the ingredients used most often during service are within reach without turning around.
The same logic explains why plates, pans and tools are stored at the point of use. Anything that forces a cook to leave the station during service is a design failure.
Clean and dirty flows are separated
Deliveries, storage, preparation, cooking, service and dishwashing form a sequence, and the layout tries to keep that sequence moving in one direction.
Returning dirty plates should not cross the path of finished food or of raw ingredients being prepared, because those crossings are where contamination risk concentrates.
In cramped premises where full separation is impossible, the crossings are managed by timing instead, with preparation and service scheduled so the paths are not used simultaneously.
Preparation happens elsewhere and earlier
Very little is made from scratch during service. Stocks, sauces, portioned proteins and cut vegetables are produced in advance in a separate preparation area.
That area has different requirements from the line: more bench space, less heat, and no need for the tight adjacency that service demands.
Splitting the two lets the line stay compact. A kitchen that tried to do preparation and service in the same space would need both to be larger and would do neither well.
Ventilation dictates what can go where
Extraction hoods are fixed, expensive and structurally demanding, so heat-producing equipment must sit beneath them and cannot be relocated on a whim.
This makes ventilation the least flexible element of the design. Menus change and stations get reassigned, but the cooking equipment stays where the hood is.
A restaurant changing concept often discovers the old hood layout constrains the new menu, which is why kitchen refits cost far more than dining room refits.
